I dislike the added ingredients found in many processed foods and feel much happier and healthier when I prepare the food myself and know exactly what has gone into it. For a team breakfast recently, I prepared a homemade granola, strawberry compote and added maple syrup to some plain yogurt to give it a more interesting twist.
This makes a fairly simple, very cheap, somewhat healthy, and very delicious breakfast that will make you turn your nose up at the overpriced yogurt parfaits you find at the popular cafes. Scroll down for the recipe.
Once you’ve made the base granola, you can add a variety of nuts, raisins, pumpkin seeds to customize your cereal as you wish. Tastes equally delicious with yogurt or milk.
1 cup whole oats
2 cups rolled oats
1/8 tsp salt
1 tsp cinnamon
¼ cup vegetable oil
1 tablespoon vanilla
½ cup honey
Preheat oven to 175 degrees Celsius. Mix all ingredients together well and pour mixture onto a large cookie tray. Bake on top shelf in oven for approx 45 minutes until mixture is golden brown. Use a spatula to turn oats every 15 minutes so they get toasted evenly. Remove from oven and leave to cool at room temperature. Note: The oats may be slightly moist and chewy as soon as they come out of the oven but will become crunchy as they cool. Store in an airtight container. Will keep at room temperature for 1 week.
Approx 16 ounces or 450 grams frozen strawberries
2-3 tablespoons sugar, to taste
2-3 tablespoons water
Heat all ingredients in a saucepan on medium heat. Once the strawberries defrost and the mixture begins to boil, reduce heat and let simmer for approx. 10 minutes. Mixture will thicken slightly. You can use a spoon to break the strawberry chunks into smaller pieces or leave the whole. Let cool. Will keep in the refrigerator for 2-3 days.
1 kg plain low-fat yogurt
2-3 tablespoons pure maple syrup, to taste
½ tablespoon vanilla extract, to taste
Whisk all ingredients together in a large bowl. Add more or less vanilla to taste. Will keep in the refrigerator for 2-3 days.
To make the parfait:
Put yogurt at the bottom of a bowl. Top with strawberry compote. Sprinkle granola on top. Voila!
